A minus sign indicates the favorite (rare with racing events, especially when over 50 cars are racing, like in Le Mans) and tells you the amount of GC you need to put in to win 100.

So, if you support Ferrari at odds of +260 and back them with 100 GC, you're on your way to winning 260 GC + your original 100 GC, or 360 GC in total. If you support Toyota, you can win 600 GC in total, and if you choose Cadillac, you can win 650 GC.
